Roasted Asparagus with Garlic, Lemon & Parmesan
A bright, elegant vegetable side that’s simple enough for a weeknight but stunning enough for guests. Roasted asparagus is enhanced with zesty lemon, nutty Parmesan, and a sprinkle of toasted pine nuts. Bonus: leftovers tossed with pasta make the dreamiest next-day lunch.
Ingredients:
- 1 bunch asparagus (snap tough ends, trim tips for presentation)
- 1 tbsp olive oil
- 2 cloves garlic, minced
- Zest of u00bd lemon (plus extra for finishing)
- Salt and freshly ground black pepper, to taste
- Grated Parmesan cheese (or capers for dairy-free)
- Toasted pine nuts (or chopped nuts, sunflower seeds, or crispy quinoa)
🔥 Method
- Preheat oven to 425°F (220°C).
- Place trimmed asparagus on a sheet pan. Drizzle with olive oil and sprinkle with garlic, lemon zest, salt, and pepper.
- Roast for 10–12 minutes, until tender and lightly golden.
- Immediately sprinkle with Parmesan (or capers) and toasted nuts.
- Finish with a final squeeze of lemon juice and zest.
- Serve warm or at room temperature.
- Optional: Chop leftovers and toss with your favorite pasta and olive oil for a gorgeous lunch.
