Roasted Asparagus with Garlic, Lemon & Parmesan

A bright, elegant vegetable side that’s simple enough for a weeknight but stunning enough for guests. Roasted asparagus is enhanced with zesty lemon, nutty Parmesan, and a sprinkle of toasted pine nuts. Bonus: leftovers tossed with pasta make the dreamiest next-day lunch.

🔥 Method

  1. Preheat oven to 425°F (220°C).
  2. Place trimmed asparagus on a sheet pan. Drizzle with olive oil and sprinkle with garlic, lemon zest, salt, and pepper.
  3. Roast for 10–12 minutes, until tender and lightly golden.
  4. Immediately sprinkle with Parmesan (or capers) and toasted nuts.
  5. Finish with a final squeeze of lemon juice and zest.
  6. Serve warm or at room temperature.
  7. Optional: Chop leftovers and toss with your favorite pasta and olive oil for a gorgeous lunch.
