Directions

  1. Preheat the oven to 350°F. Lightly grease a small oven-safe baking dish.
  2. Make the crumble topping by combining the OLD-FASHIONED OATS,
    ALL-PURPOSE FLOUR,
    SALT, and
    BROWN SUGAR in a medium bowl.
  3. Add the cold, cubed VEGAN BUTTER. Use your fingers or a fork to cut the butter into the dry ingredients until coarse, chunky crumbles form. Set the topping aside.
  4. In a separate bowl, combine the quartered STRAWBERRIES,
    BLUEBERRIES,
    LEMON JUICE,
    SUGAR, and
    CORNSTARCH OR TAPIOCA STARCH.
  5. Stir the berry mixture gently until the fruit is evenly coated with the sugar and starch.
  6. Transfer the berry filling to the prepared baking dish and spread it into an even layer.
