Ingredients:
- 1 cup strawberrries (quartered)
- 1 cup blueberries
- 1 tsp lemon juice
- 1-2 tbsp sugar (depending how sweet you want it)
- 1 tbsp corn starch (or tapioca starch)
For the Crumble Topping
- 1/2 cup old fashioned oats
- 1/2 cup all purpose flour
- 1 pinch salt
- 1/3 cup packed brown sugar
- 5 tbsp cubed vegan butter

Directions
- Preheat the oven to 350°F. Lightly grease a small oven-safe baking dish.
- Make the crumble topping by combining the OLD-FASHIONED OATS,
ALL-PURPOSE FLOUR,
SALT, and
BROWN SUGAR in a medium bowl. - Add the cold, cubed VEGAN BUTTER. Use your fingers or a fork to cut the butter into the dry ingredients until coarse, chunky crumbles form. Set the topping aside.
- In a separate bowl, combine the quartered STRAWBERRIES,
BLUEBERRIES,
LEMON JUICE,
SUGAR, and
CORNSTARCH OR TAPIOCA STARCH. - Stir the berry mixture gently until the fruit is evenly coated with the sugar and starch.
- Transfer the berry filling to the prepared baking dish and spread it into an even layer.
- Sprinkle the prepared CRUMBLE TOPPING evenly over the fruit.
- Bake for 45–50 minutes, or until the topping is beginning to turn golden brown and the berry filling is bubbling around the edges.
- Allow the crumble to cool slightly before serving so the berry filling can thicken.
