Mediterranean-Style Baked Cod
Flaky, tender, and bathed in a vibrant mix of lemon, olive oil, and Mediterranean spices, this baked cod recipe is simplicity at its most flavorful. Layered with sweet cherry tomatoes, briny olives, and fresh herbs, every bite is light, zesty, and satisfying — just like a seaside dinner in Santorini.

Ingredients:
- 4 cod fillets (about 6 oz each)
- 2 tablespoons olive oil

- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt & pepper to taste
- 1 cup cherry tomatoes, halved
- 0.3 cup pitted Kalamata olives
- 2 tablespoons chopped fresh parsley
- Lemon wedges for serving

Instructions
- Preheat the oven: Set to 400°F (200°C). Lightly grease a baking dish with olive oil.
- Season the cod: Pat the fillets dry. In a small bowl, mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Brush this marinade over each piece of cod.
- Layer the flavor: Scatter cherry tomatoes and olives around and on top of the fillets.
- Bake: Place in the oven and bake for 15–18 minutes, or until the cod flakes easily with a fork.
- Finish fresh: Garnish with chopped parsley and serve with lemon wedges. Best enjoyed with couscous, salad, or roasted veggies.
