
Mediterranean Baked Cod
Ingredients:
- 2-4 fillets Baked Cod (or any white fish)
- 1 tbsp dried oregano
- Chili flakes (optional)
- Salt and pepper to taste
- 1/3 cup olive oil ((more as needed))
- 4-6 garlic cloves (roughly chopped)
- 1 cup Greek olives
- 1 cup cherry tomatoes
- 2 tsp capers
- 4-6 thyme sprigs
- 1-2 tbsp parsley (to top)
Recipe Steps:
Preheat the oven to 375 degrees F.
Coat the bottom of the baking dish with olive oil.
Add fish and flip in olive oil on both sides.
Season your fish with salt, pepper, oregano, and chili flakes.
Add in the garlic slices, tomatoes, olives, capers and thyme sprigs.
Toss everything together, add more olive oil, if needed. Bake for 15-18 minutes depending on the size of your fillets.
If you want more of a char, you can broil instead, but watch it carefully! Or you can switch to broil after 10 or so mins of baking. Top with parsley and enjoy!
