The ultimate meatloaf sandwich—grilled to perfection and slathered with a tangy cherry pepper mayo! Loaded with sliced pickles and diced onions, this sandwich is a delicious way to use up leftover meatloaf. Bold, savory, and incredibly satisfying.
Ingredients:
- bread
- meatloaf (leftover)
- mayo
- cherry peppers (sliced + brine)
- pickles (sliced)
- onion (diced)

Directions
- Grill bread and slices of meatloaf in a pan or on a griddle until golden brown on each side.
- In a small bowl, combine cherry peppers, mayonnaise, and cherry pepper brine. Blend until smooth to create a spicy, tangy spread.
- Spread the cherry pepper mayo on both slices of toasted bread.
- Place the grilled meatloaf slices on the bottom slice of bread.
- Top with sliced pickles and diced onions.
- Add more cherry pepper mayo on top of the onions and pickles, then close the sandwich with the top slice of bread.
- Slice in half and enjoy warm!
