The ultimate meatloaf sandwich—grilled to perfection and slathered with a tangy cherry pepper mayo! Loaded with sliced pickles and diced onions, this sandwich is a delicious way to use up leftover meatloaf. Bold, savory, and incredibly satisfying.

Directions

  1. Grill bread and slices of meatloaf in a pan or on a griddle until golden brown on each side.
  2. In a small bowl, combine cherry peppers, mayonnaise, and cherry pepper brine. Blend until smooth to create a spicy, tangy spread.
  3. Spread the cherry pepper mayo on both slices of toasted bread.
  4. Place the grilled meatloaf slices on the bottom slice of bread.
  5. Top with sliced pickles and diced onions.
  6. Add more cherry pepper mayo on top of the onions and pickles, then close the sandwich with the top slice of bread.
  7. Slice in half and enjoy warm!
