Ingredients:
- 8 oz shellbow pasta
- 2 tbsp olive oil
- 10oz cremini or baby bella mushrooms, sliced
- 3 cloves garlic, minced
- 1/2 tsp red pepper flakes
- 1/3 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup grated parmesan
- Salt & black pepper to taste
- Fresh basil or parsley, for garnish
Instructions
- Boil the pasta: Cook shellbows in salted water until just al dente. Reserve 1 cup of pasta water and drain.
- Sauté mushrooms: In a large skillet, heat olive oil over medium-high. Add the mushrooms and let them brown undisturbed for 3–4 minutes, then stir and cook until golden.
- Add aromatics: Stir in garlic, red pepper flakes, and sun-dried tomatoes. Cook for 1–2 minutes until fragrant.
- Make it creamy: Lower heat to medium and pour in the heavy cream. Let it simmer gently for 3 minutes.
- Add cheese: Stir in the parmesan until melted and smooth. Season with salt and pepper.
- Combine pasta: Add the drained shellbows to the sauce, tossing gently. Add splashes of pasta water to loosen and coat evenly.
- Serve & love: Spoon into bowls and top with basil or parsley. Serve hot and prepare for compliments.
