The ultimate way to use up leftover meatloaf! Slices are pan-fried until crispy and golden, topped with melted cheese, caramelized onions, and served on a toasted bun with ketchup. Quick, easy, and absolutely delicious.

Directions

  1. Slice leftover meatloaf into ½-inch thick slices.
  2. In a skillet over medium heat, add oil and butter. Once hot, add the meatloaf slices and fry until golden brown and crispy on both sides.
  3. Place a slice of cheese on top of each meatloaf slice and let it melt.
  4. While the cheese melts, toast the burger rolls in the same pan or a toaster.
  5. Spread ketchup on the bottom bun. Place the cheesy meatloaf slice on top.
  6. In the same pan, toss onions and fry until softened and slightly caramelized (about 2-3 minutes).
  7. Place the fried onions on top of the meatloaf, then cover with the top bun.
  8. Serve warm and enjoy!
