Few dishes capture the bold, comforting spirit of Korean barbecue like Korean BBQ Galbi. These flanken-style beef short ribs are marinated in a sweet, savory blend of soy sauce, pear, garlic, ginger, sesame oil, and scallions before being grilled until deeply caramelized and lightly charred.

Directions

  1. Prepare the marinade: In a large bowl, combine the SOY SAUCE, BROWN SUGAR, MIRIN, SESAME OIL, grated PEAR, grated ONION, minced GARLIC, grated GINGER, SESAME SEEDS, sliced SCALLIONS, and freshly cracked black pepper.
  2. Whisk the marinade until the sugar is mostly dissolved and all ingredients are evenly distributed.
  3. Marinate the ribs: Add the BEEF SHORT RIBS to the bowl and massage the marinade into the meat. Cover and refrigerate for at least 4 hours or overnight for the deepest flavor.
  4. Remove the ribs from the refrigerator about 20 minutes before grilling. Preheat an outdoor grill or grill pan to medium-high heat.
  5. Remove the ribs from the marinade and allow the excess liquid to drip away. Discard the used marinade.
  6. Grill the galbi: Arrange the ribs on the hot grill and cook for 3–4 minutes per side, or until deeply caramelized, lightly charred, and cooked to your preferred doneness.
  7. Serve: Transfer the grilled galbi to a platter and garnish with additional SCALLIONS and SESAME SEEDS. Serve hot with steamed rice, lettuce wraps, or kimchi.
