This Juicy Salmon recipe by SarahKay packs bold, umami-rich flavor in every bite. With a sweet and spicy soy glaze and perfectly crisped skin, this pan-seared, oven-finished salmon is simple, savory, and seriously satisfying.

  1. Using a sharp knife, carefully slice through the salmon skin without cutting all the way through the flesh.
  2. Sprinkle salt over the skin and press it in firmly.
  3. In a small bowl, combine soy sauce, dark brown sugar, and a pinch of MSG.
  4. Chop a fresh chili pepper and add it to the sauce mix.
  5. Heat olive oil in a skillet and place the salmon in skin-side down. Pour the sauce mixture over the top of the fish.
  6. Sear the salmon on both sides until nicely browned, then transfer the pan to the oven to finish cooking through.
  7. Once removed from the oven, spoon the remaining pan sauce over the salmon and serve hot.
