Ultra-crispy and packed with flavor, this Jalapeño Fried Chicken is infused with a spicy, buttery aroma during frying. The perfect combination of heat, crunch, and savory seasoning!

Directions

  1. Prep the Chicken:
    Pat chicken wings dry with paper towels. In a large bowl, season with salt, pepper, garlic powder, onion powder, paprika, cayenne, Old Bay, complete seasoning, and Italian seasoning. Add mustard and massage in until well combined.
  2. Dredge the Chicken:
    In another bowl, mix flour and Lefty’s Chicken Fry seasoning. Dredge each wing in the flour mixture, pressing lightly to ensure it sticks. Place dredged wings on a wire rack and let them rest for 10–15 minutes.
  3. Infuse the Oil:
    Heat oil in a deep pot or fryer to 350°F. Add the unsalted butter, some of the sliced onions, and some of the halved jalapeños. Once the temperature returns to 350°F, add the chicken wings.
  4. Fry the Chicken:
    Carefully add the wings in batches. Fry each batch for 8–10 minutes or until golden brown, crispy, and cooked through (internal temp of 165°F). Continue the process until all batches are done.
  5. Drain and Serve:
    Transfer cooked wings to a paper towel-lined plate or wire rack. Let rest for 5 minutes. Serve hot.
