Jalapeno Fried Chicken

Ultra-crispy and packed with flavor, this Jalapeño Fried Chicken is infused with a spicy, buttery aroma during frying. The perfect combination of heat, crunch, and savory seasoning!
Ingredients:
Chicken Wings
- 2 lbs chicken wings
- 1 tsp kosher salt
- 1 tsp black pepper
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 tsp smoked paprika
- 1 tsp cayenne pepper
- 1 tsp Old Bay seasoning
- 1 tsp complete seasoning
- 1 tsp Italian seasoning
- 1 tbsp Frenchu2019s mustard (for the binder)
Dredge
- 2 cups all-purpose flour
- 1/2 cup Leftyu2019s Chicken Fry seasoning
Oil
- 1 pot oil for frying
- 1 onion (sliced thick)
- 4 jalapeu00f1os (halved and seeds removed)
- 1 stick unsalted butter
Directions
- Prep the Chicken:
Pat chicken wings dry with paper towels. In a large bowl, season with salt, pepper, garlic powder, onion powder, paprika, cayenne, Old Bay, complete seasoning, and Italian seasoning. Add mustard and massage in until well combined. - Dredge the Chicken:
In another bowl, mix flour and Lefty’s Chicken Fry seasoning. Dredge each wing in the flour mixture, pressing lightly to ensure it sticks. Place dredged wings on a wire rack and let them rest for 10–15 minutes. - Infuse the Oil:
Heat oil in a deep pot or fryer to 350°F. Add the unsalted butter, some of the sliced onions, and some of the halved jalapeños. Once the temperature returns to 350°F, add the chicken wings. - Fry the Chicken:
Carefully add the wings in batches. Fry each batch for 8–10 minutes or until golden brown, crispy, and cooked through (internal temp of 165°F). Continue the process until all batches are done. - Drain and Serve:
Transfer cooked wings to a paper towel-lined plate or wire rack. Let rest for 5 minutes. Serve hot.
