Crispy on the outside, tender and juicy on the inside — these homemade Wendy’s-style chicken nuggets bring fast food flavor straight to your kitchen! Easy to make and packed with that signature peppery bite, they’re perfect for lunch, dinner, or a nostalgic snack.

Instructions

  1. Marinate the Chicken: In a bowl, combine the chicken pieces, buttermilk, and hot sauce. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
  2. Prepare the Coating: In a separate bowl, whisk together the flour, cornstarch, garlic powder, onion powder, paprika, salt, black pepper, and cayenne.
  3. Heat the Oil: In a deep skillet or pot, heat about 2 inches of vegetable oil to 350°F (175°C).
  4. Bread the Chicken: Remove the chicken from the marinade and let excess drip off. Toss each piece in the flour mixture, pressing to coat well. Shake off any excess.
  5. Fry in Batches: Carefully add nuggets to the hot oil, cooking in batches to avoid overcrowding. Fry for 3–4 minutes per side or until golden brown and cooked through (internal temp should be 165°F).
  6. Drain and Serve: Transfer to a paper towel-lined plate to drain. Let cool slightly and serve with your favorite dipping sauce.
