This Grilled Zucchini is one of those simple recipes that can completely change how you feel about vegetables. Directions

  1. Preheat the grill to MEDIUM-HIGH HEAT.
  2. Trim the ends from the ZUCCHINI, then slice each zucchini lengthwise through the center.
  3. Using a sharp knife, carefully score the cut side of each zucchini half in a shallow CROSSHATCH PATTERN. Avoid cutting all the way through the zucchini.
  4. Spray or brush the zucchini lightly with AVOCADO OIL.
  5. Season the cut sides with a light, even coating of SCORPION RUB.
  6. Place the zucchini directly onto the grill with the CUT SIDE FACING DOWN.
  7. Grill for approximately 15 MINUTES, or until the cut sides develop visible grill marks and begin to soften.
  8. Flip the zucchini and place the BUTTER over the scored surfaces so it melts into the crosshatch cuts.
  9. Continue grilling for another 10 MINUTES, or until the zucchini is tender, buttery, and lightly charred around the edges.
  10. Transfer the zucchini to a cutting board, chop it into serving-sized pieces, and serve immediately.
