These Grilled Oyster Mushroom Skewers are meaty, smoky, and perfect for summer grilling. Oyster mushrooms soak up a flavorful marinade, then cook over the grill until browned with crisp, lightly charred edges. Serve them with chimichurri or barbecue sauce, pile them onto a bun with coleslaw, or enjoy them straight from the skewer.

Directions

  1. Prepare the MARINADE in a large bowl.
  2. Add the OYSTER MUSHROOMS and toss thoroughly with clean hands until evenly coated.
  3. Slide the mushrooms onto the SKEWERS, packing them relatively tightly so they remain secure when flipped.
  4. Preheat the grill to MEDIUM-HIGH HEAT.
  5. Place the mushroom skewers directly onto the grill.
  6. Allow the mushrooms to release and cook off their excess moisture.
  7. Flip the skewers every 4–5 MINUTES.
  8. Continue grilling until the mushrooms are deeply browned with lightly charred edges.
  9. Serve with CHIMICHURRI or BARBECUE SAUCE, or add them to a bun with COLESLAW.
