These Grilled Oyster Mushroom Skewers are meaty, smoky, and perfect for summer grilling. Oyster mushrooms soak up a flavorful marinade, then cook over the grill until browned with crisp, lightly charred edges. Serve them with chimichurri or barbecue sauce, pile them onto a bun with coleslaw, or enjoy them straight from the skewer.

Ingredients:
- 1 pound oyster mushrooms
- 1 tbsp soy sauce
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp black pepper

Directions
- Prepare the MARINADE in a large bowl.
- Add the OYSTER MUSHROOMS and toss thoroughly with clean hands until evenly coated.
- Slide the mushrooms onto the SKEWERS, packing them relatively tightly so they remain secure when flipped.
- Preheat the grill to MEDIUM-HIGH HEAT.
- Place the mushroom skewers directly onto the grill.
- Allow the mushrooms to release and cook off their excess moisture.
- Flip the skewers every 4–5 MINUTES.
- Continue grilling until the mushrooms are deeply browned with lightly charred edges.
- Serve with CHIMICHURRI or BARBECUE SAUCE, or add them to a bun with COLESLAW.
