Directions

  1. Bring a large pot of salted water to a boil. Cook 400g linguine (or spaghetti) until al dente. Reserve ½ cup pasta water, then drain the pasta.
  2. Heat 2 tbsp olive oil in a large pan over medium heat. Add 250g ground beef and 250g Italian sausage (casings removed). Break apart with a spatula and cook until browned.
  3. Stir in 1 finely diced medium onion, 4 minced garlic cloves, 1 tsp chili flakes (optional), and 1 tsp Italian seasoning. Cook until the onions are soft. Season with salt and black pepper to taste. Remove the meat mixture from the pan and set aside.
  4. In the same pan, melt 5 tbsp unsalted butter over medium heat. Add 3 minced garlic cloves and cook until fragrant, about 1 minute. Pour in the reserved ½ cup pasta water and stir.
  5. Add the cooked linguine to the pan. Stir in ½ cup grated Parmesan cheese and 1 cup shredded mozzarella until the sauce is creamy and cheesy.
  6. Fold the cooked meat mixture back into the pasta. Toss until everything is fully coated.
  7. Serve hot, garnished with fresh chopped parsley and extra Parmesan cheese. Enjoy with garlic bread or a side salad.
