This Easy Iron-Maxing Meal layers rice with ground beef, beans, carrots, and colorful bell peppers simmered with tomato sauce, then finishes everything with Parmesan and fresh herbs. The combination brings together animal- and plant-based sources of iron alongside colorful vegetables for a hearty, nutrient-dense meal.
Ingredients:
- white rice (uncooked)
- kidney beans (or beans of choice)
- carrots
- red bell pepper
- yellow bell pepper
- ground beef
- tomato sauce
- Parmesan cheese
- kale (or other greens or fresh herbs of your choice)

Directions
- Place the RICE and BEANS in separate containers, cover with water, and soak overnight.
- When ready to cook, prepare the soaked RICE and BEANS separately according to your preferred cooking method.
- Add the CARROTS, RED BELL PEPPER, and YELLOW BELL PEPPER to a large pan and cook until they begin to soften.
- Add the GROUND BEEF to the vegetables and cook until the beef is browned and fully cooked.
- Stir in the cooked BEANS and TOMATO SAUCE.
- Reduce the heat to low and allow the mixture to simmer for a few minutes, then add your SEASONING OF CHOICE to taste.
- Spoon the cooked RICE into bowls and top with the ground beef, bean, and vegetable mixture.
- Finish with PARMESAN CHEESE and FRESH HERBS of choice. Serve warm.
