Ingredients:
- olive oil spray
- 1 onion
- 2 cloves garlic
- 500 g beef mince (5%)
- 2 beef stock cubes
- 500 ml passata
- 50 g red lentils
- 150 g lasagna (8 sheets)

- 30 g mozzarella
Ingredients are subject to availability at local stores. Unavailable items will be automatically substituted at best-effort.
Directions
- Preheat your oven to 180°C (350°F). Spray a baking dish with oil spray.
- In a large pan over medium heat, spray with oil spray. Add diced onion and minced garlic and fry until softened.
- Add lean beef mince and brown until cooked through.
- Crumble beef stock cubes into the pan, then add passata, red lentils, salt, pepper, and herbs of your choice.
- Bring to a simmer and let cook for 30 minutes, stirring occasionally, until the sauce has reduced and thickened.
- In a blender or food processor, blend cottage cheese until smooth and creamy.
- Assemble the lasagna: Spread a thin layer of the beef sauce on the bottom of the prepared baking dish. Top with a layer of lasagna sheets, then a layer of the blended cottage cheese, then more beef sauce. Repeat layers until all ingredients are used, finishing with a layer of beef sauce on top.
- Sprinkle mozzarella cheese over the top.
- Bake for 1 hour, until the lasagna is bubbly and golden on top.
- Let rest for 10 minutes before slicing. Serve warm—it’s also incredibly good cold! Enjoy.
