Directions

  1. Preheat your oven to 180°C (350°F). Spray a baking dish with oil spray.
  2. In a large pan over medium heat, spray with oil spray. Add diced onion and minced garlic and fry until softened.
  3. Add lean beef mince and brown until cooked through.
  4. Crumble beef stock cubes into the pan, then add passata, red lentils, salt, pepper, and herbs of your choice.
  5. Bring to a simmer and let cook for 30 minutes, stirring occasionally, until the sauce has reduced and thickened.
  6. In a blender or food processor, blend cottage cheese until smooth and creamy.
  7. Assemble the lasagna: Spread a thin layer of the beef sauce on the bottom of the prepared baking dish. Top with a layer of lasagna sheets, then a layer of the blended cottage cheese, then more beef sauce. Repeat layers until all ingredients are used, finishing with a layer of beef sauce on top.
  8. Sprinkle mozzarella cheese over the top.
  9. Bake for 1 hour, until the lasagna is bubbly and golden on top.
  10. Let rest for 10 minutes before slicing. Serve warm—it’s also incredibly good cold! Enjoy.
