Fudgy, decadent, and secretly packed with protein—these cottage cheese brownies are a game-changer! Made with blended cottage cheese, coconut sugar, and dark chocolate chips, they’re gluten-free and irresistibly rich. The perfect healthy dessert that doesn’t taste healthy at all.
Ingredients:
- 1/2 cup chocolate (melted)
- 2/3 cup coconut sugar
- 1 cup cottage cheese (blended)
- 3/4 cup milk
- 2/3 cup cocoa powder
- 3/4 cup gluten free flour
- 1/2 tsp baking soda
- 3/4 cup dark chocolate chips

Directions
- Preheat your oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper.
- In a mixing bowl, combine melted chocolate, blended cottage cheese, and coconut sugar (or brown sugar). Stir together until well combined.
- Add milk and stir to combine. The batter will be runny at this stage.
- Add gluten-free flour (or all-purpose flour), cocoa powder, and baking soda. Stir until combined. The batter will become thick.
- Fold in dark chocolate chips.
- Transfer the batter to the lined pan and spread into an even layer.
- Bake for 20-21 minutes, or until just barely set in the middle. Do not overbake—the brownies will look gooey but will firm up slightly as they cool.
- Let the brownies cool completely in the pan before slicing into 9 squares. Store in the fridge for up to 4 days. Enjoy!
