
Cooked Shrimp Ceviche
This zesty, refreshing shrimp ceviche is the perfect light dish for warm days or when you’re craving something vibrant and packed with flavor. Made with cooked shrimp, crisp veggies, and bold citrus, it’s quick to prep and always a crowd favorite. Serve with tostadas, chips, or straight out of the bowl!
Ingredients:
- 1 lb cooked shrimp, chopped into bite-sized pieces
- 3 roma tomatoes, diced
- 1 small red onion, finely diced
- 1 cucumber, peeled and diced
- 2 jalapeu00f1os, finely chopped (remove seeds for less heat)
- 0.5 cup chopped cilantro
- 6 limes (juiced)
- 1 orange (juiced)
- Salt to taste
Instructions
- Chop the cooked shrimp into small, bite-sized pieces and place them in a large bowl.
- Add in the tomatoes, onions, cucumbers, jalapeños, and cilantro.
- Pour in the lime juice and orange juice, then mix everything together until fully coated.
- Add salt to taste and let it sit in the fridge for at least 15–20 minutes to allow the flavors to blend.
- Stir in avocado, Clamato juice, or hot sauce if using, just before serving.
- Serve chilled with tostadas, tortilla chips, or eat it by the spoonful!
