For The Carne con Chipotle
- Beef Chuck Cross Rib, cut into bite-sized chunks
- 1 tsp paprika
- 1 tsp chili powder
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp oregano
- salt and pepper to taste
For the Salsa
- 4 tomatoes
- 1/2 onion
- 2 garlic cloves
- 3 chile de u00e1rbol
- 3 chipotle peppers
- Salt & pepper to taste
- Handful of cilantro
Instructions
- Prep the beef: Season beef with all dry spices. Mix thoroughly to coat all pieces evenly.
- Sear: Heat a pan over medium-high heat. Fry the beef for 5–8 minutes until browned and fragrant. Set aside.
- Make the salsa: Boil tomatoes, onion, garlic, and both chilies for about 7 minutes. Blend with chipotle peppers, salt, pepper, and cilantro until smooth.
- Simmer: Return beef to pan and pour the blended salsa over it. Simmer on low heat for 20–30 minutes until the beef is tender and infused with flavor.
- Serve: Enjoy with warm tortillas, over rice, or with a side of beans.
