These soft and fluffy blueberry protein biscuits are packed with juicy berries, bright lemon zest, and extra protein from Greek yogurt and vanilla protein powder. Perfect for meal prep, they make an easy grab-and-go breakfast or satisfying snack that tastes like a bakery treat while offering a more balanced nutritional profile.
Ingredients:
- 1 3/4 cup plain Greek yogurt
- 2 eggs
- 1/4 cup milk
- 2 tsp vanilla extract
- 2 tbsp honey
- 2 lemons (zested)
- 2 cups all purpose flour
- 1/3 cup ground flax seed
- 1.5 tbsp baking powder
- 1 tsp salt
- 1/4 cup vanilla protein powder
- 1 cup fresh blueberries

Directions
- Preheat your oven to 400°F and prepare a baking sheet with parchment paper or a light coating of cooking spray.
- In a large mixing bowl, whisk together the Greek yogurt, eggs, milk, vanilla extract, honey, and lemon zest.
- Add the flour, ground flaxseed, baking powder, salt, and vanilla protein powder. Mix just until combined.
- Gently fold in the fresh blueberries, being careful not to overmix.
- Scoop the dough onto the prepared baking sheet to form biscuits.
- Bake at 400°F for 5 minutes, then reduce the oven temperature to 350°F and continue baking for 18–20 minutes, or until lightly golden and cooked through.
- While the biscuits cool, whisk together the powdered sugar and lemon juice until smooth.
- Drizzle the lemon glaze over the cooled biscuits before serving.
