This bright and creamy cucumber salad hits all the right notes, with refreshing crunch, rich egg, and tangy mayo with a savory kick from paprika and MSG. Perfect as a side or light lunch!

Ingredients:

1 large cucumber (sliced into thin rounds)
2 large hard-boiled eggs (mashed)
1 stalk celery (thinly sliced)
1/4 red onion (thinly sliced)
2 tbsp Kewpie mayonnaise
2 tbsp sour cream
1 tsp paprika
1/2 lemon (juiced)
1 pinch MSG

Directions

Slice the cucumber into rounds and place in a large bowl.
Hard-boil the eggs, then roughly chop or mash them over the cucumbers.
Thinly slice the celery and red onion, and add them to the bowl.
Add 2 tablespoons of Kewpie mayonnaise and 2 tablespoons of sour cream.
Sprinkle in 1 teaspoon of paprika, the juice of half a lemon, and a pinch of MSG.
Mix everything together until it’s creamy and well combined. Serve chilled or at room temperature.
