Directions

  1. Line a baking sheet or freezer-safe tray with parchment paper.
  2. Slice the MEDJOOL DATES in half lengthwise and remove the pits, creating 20 date halves.
  3. Arrange the dates cut-side up on the parchment-lined tray.
  4. Place another sheet of parchment paper over the dates and gently flatten each half with your hand or the bottom of a glass.
  5. Transfer the flattened dates to the freezer while preparing the remaining ingredients.
  6. Peel the BANANA and slice it into 20 rounds.
  7. If using PBFIT, prepare it according to the package directions until it reaches a smooth, spreadable consistency. Regular peanut butter may be used instead.
  8. Place the DARK CHOCOLATE CHIPS in a microwave-safe bowl.
  9. Microwave the chocolate in short intervals, stirring thoroughly between each interval, until melted and smooth.
  10. Remove the flattened dates from the freezer.
  11. Spread a small amount of prepared PBfit or PEANUT BUTTER over the center of each date half.
  12. Place one banana slice on top of the peanut butter layer.
  13. Spoon a small amount of melted DARK CHOCOLATE over each banana slice, allowing the chocolate to spread naturally across the top.
  14. Lightly sprinkle each bite with FLAKY SEA SALT.
  15. Return the tray to the freezer for at least 30 minutes, or until the chocolate is firm and the bites are thoroughly chilled.
  16. Transfer the frozen bites to an airtight freezer-safe container, placing parchment paper between layers if needed.
  17. Serve directly from the freezer, or allow the bites to soften at room temperature for 2–3 minutes before eating.
