Banana bread syrup: 1 mashed banana 1 cup brown sugar 1 cup water 1 tsp ground cinnamon 1 tsp vanilla bean paste/ extract Pinch of sea salt -Add ingredients (except the vanilla) to a sauce pan over medium heat, mix and allow mixture to come to a boil. Reduce heat and allow to simmer for 7-10 minutes. Turn off heat and add the vanilla. Let it cool down to room temperature, blend or strain! Store in an air tight container/ jar and refrigerate for 2 weeks! Whipped cookie butter cold foam: 1/2 cup heavy whipping cream 2 tbsp cookie butter spread 2 tbsp powdered sugar Splash of vanilla bean paste/ extract Pinch of sea salt -Add all the ingredients to a bowl, beat on high speed until it's thick and fluffy. Add to a piping bag (or ziplock bag), and top on your drink of choice! This Banana Bread Latte combines homemade banana bread syrup with rich espresso and creamy milk before being topped with an irresistibly fluffy whipped cookie butter cold foam. It’s the perfect café-style drink to make at home.
Ingredients:
For the Banana Bread Syrup
- 1 banana (mashed)
- 1 cup brown sugar
- 1 cup water
- 1 tsp ground cinnamon
- 1 tsp vanilla bean paste (or extract)
- 1 pinch salt
For the Whipped Cookie Butter Cold Foam
- 1/2 cup heavy cream
- 2 tbsp cookie butter spread
- 2 tbsp powdered sugar
- 1 splash vanilla bean paste (or extract)
- 1 pinch sea salt
For the Whipped Cookie Butter Banana Latte
- 1 tbsp banana bread syrup
- double shot espresso
- milk (of choice)
- ice
- whipped cookie butter cold foam (from above)
- crushed cookies (optional, for topping)
- sliced bananas (optional, for topping)
- cinnamon (optional, for topping)

Directions
- Add the mashed banana, brown sugar, water, cinnamon, and a pinch of sea salt to a saucepan. Bring to a gentle boil over medium heat.
- Reduce the heat and simmer for 7–10 minutes. Remove from the heat and stir in the vanilla. Cool completely, then blend or strain. Refrigerate for up to two weeks.
- To make the cold foam, beat together the heavy whipping cream, cookie butter, powdered sugar, vanilla, and a pinch of sea salt until thick and fluffy.
- Fill a serving glass with ice. Add 1 tablespoon banana bread syrup, the espresso, and your preferred milk. Stir well.
- Top generously with the whipped cookie butter cold foam.
- Garnish with crushed Biscoff cookies, banana slices, a sprinkle of cinnamon, or line the inside of the glass with cookie butter before assembling.
