Directions

  1. Add cottage cheese to a food processor and process until just blended. The texture should be smooth with several small chunks remaining, similar to Greek yogurt.
  2. In a large mixing bowl, whisk together all-purpose flour, dutch-processed cocoa powder, baking powder, baking soda, and salt.
  3. Add the blended cottage cheese, maple syrup, and egg to the dry ingredients. Stir well with a spoon until combined.
  4. Fold in mini chocolate chips.
  5. Take about 1½ tablespoons of dough at a time and carefully roll into balls. Flour your hands if needed to prevent sticking.
  6. Preheat your air fryer to 350°F (175°C). Coat the basket with non-stick cooking spray.
  7. Place the dough balls in the air fryer basket, trying not to overcrowd. Spray the tops with non-stick cooking spray.
  8. Air fry for 6-8 minutes, until the donut holes are set and cooked through.
  9. Remove from the air fryer and let cool completely on a wire rack.
  10. Make the icing: In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
  11. Once the donut holes are completely cooled, dip each one in the glaze. Let set for 10-15 minutes. Enjoy!
