Directions

  1. Heat 1 tablespoon olive oil in a large pot over medium heat.
  2. Add 1 diced large onion and 2-3 diced jalapeño peppers (or bell pepper for milder heat). Cook for 2-3 minutes to soften.
  3. Add 6 cloves of garlic and cook for 1 minute until fragrant.
  4. Add 2 pounds lean ground beef and break apart with a wooden spoon. Brown the meat for 5-6 minutes, stirring occasionally.
  5. Stir in 3 tablespoons chili powder, 1 tablespoon ground cumin, 1 teaspoon cayenne pepper (optional for extra spice), salt, black pepper to taste, and 2 tablespoons tomato paste. Cook for 1-2 minutes to let the spices bloom.
  6. Add 1½ cups beef broth, 1 can (15 oz) diced tomatoes with juices (fire-roasted recommended), 1 can (15 oz) crushed tomatoes with juices, and 2 cans (15 oz each) red kidney beans, drained and rinsed. Stir to combine.
  7. Bring to a boil, then reduce heat and simmer, uncovered, for at least 30 minutes to let the flavors develop. You can simmer longer for deeper flavor, up to 60 minutes.
  8. Add optional extras like hot sauce or red pepper flakes to taste.
  9. Serve hot with your favorite toppings: shredded cheddar cheese, sour cream, chopped green onion, cilantro, Fritos, or tortilla chips. Enjoy!
