These $5 Smashed Bean and Potato Tostadas layer crispy corn tortillas with seasoned black beans, savory sweet potatoes, quinoa, red onion, fresh tomatoes, herbs, hot sauce, and a creamy vegan sauce. Ingredients:
For the Black Beans
- black beans (cooked)
- fajita seasoning (or your favorite savory seasoning)
- agave (or maple syrup)
- lime (fresh)
- salt (to taste)
- pepper (to taste)
For the Sweet Potatoes
- sweet potatoes (chopped)
- za\'atar (or smoked paprika, or your favorite savory seasoning)
For the Quinoa
- quinoa
- red onion (chopped)
- poultry seasoning (or cayenne, or your favorite savory seasoning)
- salt (to taste)
- pepper (to tastw)
- fresh herbs (chopped)
For Assembly
- corn tortillas (toasted)
- tomatoes (chopped)
- fresh herbs (chopped)
- hot sauce
- vegan sauce

Directions
- Prepare the SWEET POTATOES by tossing the chopped potatoes with your favorite savory seasonings, such as ZA’ATAR and SMOKED PAPRIKA. Roast or sauté until tender with lightly browned edges.
- Add the cooked BLACK BEANS to a pan and season with your favorite savory seasoning, such as FAJITA SEASONING. Add a small drizzle of AGAVE OR MAPLE SYRUP and a squeeze of FRESH LIME. Season with SALT AND PEPPER to taste.
- Warm the beans through, then lightly smash some of them while leaving others whole for texture.
- Cook the QUINOA according to the package directions if it is not already prepared.
- Sauté the RED ONION until softened. Combine it with the cooked quinoa and season with your favorite savory seasoning, such as POULTRY SEASONING and CAYENNE. Add salt and pepper to taste, then fold in CHOPPED FRESH HERBS.
- Toast the CORN TORTILLAS until crisp and sturdy enough to hold the toppings.
- Spread a generous layer of the smashed seasoned black beans over each toasted tortilla.
- Top each tostada with the seasoned sweet potatoes and quinoa mixture.
- Finish with CHOPPED TOMATOES, FRESH HERBS, HOT SAUCE, and your favorite CREAMY VEGAN SAUCE. Serve immediately while the tortillas are crisp.
