Turkey Meatballs
- 1 lb lean ground turkey
- 1/2 cup plain breadcrumbs
- 1 egg
- 2 cloves garlic (minced or 1 tsp garlic powder)
- 1 tsp dried oregano
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Rice Bowl Base
- 2 cups uncooked rice
- 1 cucumber (diced)
- 1 cup cherry tomatoes (halved)
- 1/2 red onion (thinly sliced)
Creamy Greek Sauce
- 1 cup plain Greek yogurt
- 1/2 lemon (juice from half lemon)
- 1 clove garlic (minced)
- 1 tbsp water
- salt
- pepper
Optional toppings

Step 1: Cook rice
Cook rice according to package directions.
Set aside and fluff with a fork.
Step 2: Make meatball mixture
In a large bowl add:
- ground turkey
- breadcrumbs
- egg
- garlic
- oregano
- onion powder
- salt
- pepper
Mix with your hands or spoon until just combined.
Do not overmix.
Step 3: Form meatballs
Roll mixture into 15–20 meatballs
About golf-ball size.
Step 4: Cook meatballs
Heat a large skillet over medium heat.
Lightly spray or add 1 tbsp oil.
Place meatballs into skillet.
Cook:
10–12 minutes
Rotate every few minutes.
Meatballs should become golden brown outside and reach 165°F internally.
Step 5: Make sauce
Mix together:
- Greek yogurt
- lemon
- garlic
- water
- salt
- pepper
Stir until smooth.
Step 6: Assemble bowls
Add rice to bowls.

- cucumber

- red onion
Drizzle Greek sauce generously.
