A restaurant-worthy salmon dinner ready in minutes! Flaky, seasoned salmon is served with a creamy, luxurious pan sauce made with sun-dried tomatoes, spinach, and parmesan—simple ingredients for maximum flavor.
Ingredients:
- 2 salmon filets
- 1 tbsp olive oil
- 1/2 tsp lemon pepper seasoning (plus more for sauce)
- 1/2 tsp smoked paprika (plus more for sauce)
- 1/2 tsp garlic herb seasoning (plus more for sauce)
- 1/4 cup sun-dried tomatoes (chopped)
- 2 cups fresh spinach
- 2 cloves garlic (minced)
- 1/2 cup heavy cream
- 1/4 cup parmesan cheese (grated)

Directions
- Pat the 2 salmon fillets dry with a paper towel. Drizzle them lightly with olive oil and season generously on both sides with lemon pepper seasoning, smoked paprika, and garlic herb seasoning.
- Heat a large skillet over medium-high heat with a drizzle of olive oil. Add the salmon fillets, skin-side down if they have skin. Cook for 4-5 minutes per side, or until cooked to your liking and nicely seared. Remove the salmon from the pan and set aside on a plate.
- In the same pan, add the sun-dried tomatoes and a large handful of spinach. Sauté for 1-2 minutes until the spinach wilts.
- Add the minced garlic to the pan and cook for another 30 seconds until fragrant.
- Reduce the heat to medium-low. Pour in heavy cream (about ½ to ¾ cup) and stir, scraping up any browned bits from the bottom of the pan.
- Add another pinch of lemon pepper, smoked paprika, and garlic herb seasoning to the cream sauce and stir to combine.
- Let the sauce simmer for 2-3 minutes to thicken slightly. Remove from heat and stir in grated parmesan cheese until melted and smooth.
- Return the salmon fillets to the pan, spooning the sauce over them to warm through. Alternatively, plate the salmon and pour the creamy sauce over the top. Serve immediately.
