Directions

  1. Pat the 2 salmon fillets dry with a paper towel. Drizzle them lightly with olive oil and season generously on both sides with lemon pepper seasoning, smoked paprika, and garlic herb seasoning.
  2. Heat a large skillet over medium-high heat with a drizzle of olive oil. Add the salmon fillets, skin-side down if they have skin. Cook for 4-5 minutes per side, or until cooked to your liking and nicely seared. Remove the salmon from the pan and set aside on a plate.
  3. In the same pan, add the sun-dried tomatoes and a large handful of spinach. Sauté for 1-2 minutes until the spinach wilts.
  4. Add the minced garlic to the pan and cook for another 30 seconds until fragrant.
  5. Reduce the heat to medium-low. Pour in heavy cream (about ½ to ¾ cup) and stir, scraping up any browned bits from the bottom of the pan.
  6. Add another pinch of lemon pepper, smoked paprika, and garlic herb seasoning to the cream sauce and stir to combine.
  7. Let the sauce simmer for 2-3 minutes to thicken slightly. Remove from heat and stir in grated parmesan cheese until melted and smooth.
  8. Return the salmon fillets to the pan, spooning the sauce over them to warm through. Alternatively, plate the salmon and pour the creamy sauce over the top. Serve immediately.
