📝 Ingredients (Serves 2)
- 1 cup farro, rinsed
- 1 tbsp olive oil
- 1 medium zucchini, diced
- 2 cups chopped tomatoes
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 2½ cups vegetable broth
- Salt & ground black pepper
- Fresh parsley or basil for garnish

- Step 1 Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, sautéing until soft—about 4 min.
- Step 2 Stir in the zucchini and cook 5 minutes. Season lightly with salt and pepper.
- Step 3 Add rinsed farro, stir to coat. Add tomatoes, oregano, and basil. Mix well.
- Step 4 Pour in vegetable broth. Bring to boil, reduce to low, cover and simmer 30 min, stirring occasionally.
- Step 5 Taste and adjust seasoning. Let sit covered for 5 min off heat.
- Step 6 Serve warm, garnished with fresh parsley or basil.
