  • 1 cup farro, rinsed
  • 1 tbsp olive oil
  • 1 medium zucchini, diced
  • 2 cups chopped tomatoes
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 2½ cups vegetable broth
  • Salt & ground black pepper
  • Fresh parsley or basil for garnish

  1. Step 1 Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, sautéing until soft—about 4 min.
  2. Step 2 Stir in the zucchini and cook 5 minutes. Season lightly with salt and pepper.
  3. Step 3 Add rinsed farro, stir to coat. Add tomatoes, oregano, and basil. Mix well.
  4. Step 4 Pour in vegetable broth. Bring to boil, reduce to low, cover and simmer 30 min, stirring occasionally.
  5. Step 5 Taste and adjust seasoning. Let sit covered for 5 min off heat.
  6. Step 6 Serve warm, garnished with fresh parsley or basil.
