Vodka Parmesan Chicken Sandwich

Crispy chicken cutlets layered with rich vodka sauce, gooey mozzarella, and nutty Parmesan — all nestled between a toasted bun. This sandwich is what comfort food dreams are made of.

Ingredients:

Instructions

  1. Pound chicken if needed to even thickness. Season with salt and pepper.
  2. Set up a dredging station with flour, beaten eggs, and a mix of breadcrumbs and Parmesan.
  3. Coat chicken in flour, dip in egg, then press into breadcrumb-Parmesan mixture.
  4. Heat olive oil in a skillet over medium heat. Fry chicken cutlets until golden and crispy, about 3–4 minutes per side. Transfer to paper towels.
  5. In a saucepan, heat vodka sauce until simmering. Spoon some onto each cutlet and top with mozzarella. Cover and let cheese melt slightly, or broil for 1–2 minutes.
  6. Butter and toast buns until golden.
  7. Assemble sandwiches: bottom bun, sauced chicken with melted mozzarella, basil (if using), extra Parmesan, top bun.
  8. Serve warm with chips, salad, or fries!
