Vodka Parmesan Chicken Sandwich
Crispy chicken cutlets layered with rich vodka sauce, gooey mozzarella, and nutty Parmesan — all nestled between a toasted bun. This sandwich is what comfort food dreams are made of.
Ingredients:
- 2 boneless, skinless chicken breasts (sliced in half lengthwise)
- Salt & pepper, to taste
- 1 cup flour
- 2 eggs, beaten
- 1 cup Italian breadcrumbs
- 0.5 cup grated Parmesan cheese
- Olive oil, for frying
- 1.5 cups vodka sauce (store-bought or homemade)
- 4 slices fresh mozzarella
- Fresh basil leaves (optional)
- 4 brioche or ciabatta buns
Instructions
- Pound chicken if needed to even thickness. Season with salt and pepper.
- Set up a dredging station with flour, beaten eggs, and a mix of breadcrumbs and Parmesan.
- Coat chicken in flour, dip in egg, then press into breadcrumb-Parmesan mixture.
- Heat olive oil in a skillet over medium heat. Fry chicken cutlets until golden and crispy, about 3–4 minutes per side. Transfer to paper towels.
- In a saucepan, heat vodka sauce until simmering. Spoon some onto each cutlet and top with mozzarella. Cover and let cheese melt slightly, or broil for 1–2 minutes.
- Butter and toast buns until golden.
- Assemble sandwiches: bottom bun, sauced chicken with melted mozzarella, basil (if using), extra Parmesan, top bun.
