These Vegan Taquitos are packed with seasoned tofu, black beans, corn, tomato, jalapeño, red onion, and garlic mixed with vegan yogurt, lime, and salsa. Rolled into corn tortillas and baked until browned and crisp, they make an easy plant-based meal with 8.7 grams of protein and 6.2 grams of fiber per serving.

Ingredients:
- 1 red onion (diced)
- 3 cloves garlic (minced)
- 1 roma tomato (diced)
- 1 jalapeno (diced)
- 1 cup frozen corn
- 1 block extra firm tofu (grated)
- 15 oz black beans (canned, drained, and rinsed)
- 1 cup vegan yogurt (unsweetened)
- 1 lime (juiced)
- 1/2 cup salsa
- 12 small corn tortillas
For the Spice Blend
- 2 tbsp chili powder
- 1 tbsp cumin
- 1 tbsp paprika
- 1/2 tsp garlic powder
- 1 tsp salt
To Serve
- 1 cup green goddess dressing (optional)
- vegan yogurt (unsweetened)
- pico de gallo

Directions
- Preheat the oven to 425°F.
- Add the RED ONION and GARLIC to a large pan over medium heat. Add 1 tablespoon of olive oil, if desired. Sauté for approximately 3 minutes, or until the onion is translucent.
- Add the ROMA TOMATO, JALAPEÑO, CORN, GRATED TOFU, and BLACK BEANS to the pan.
- Season with the CHILI POWDER, CUMIN, PAPRIKA, GARLIC POWDER, and SALT. Sauté for approximately 5 minutes, or until fragrant.
- Add the VEGAN YOGURT, LIME JUICE, and SALSA. Stir until the filling is evenly combined.
- Divide the filling evenly among the centers of the CORN TORTILLAS.
- Roll each tortilla tightly around the filling to form a taquito.
- Arrange the rolled taquitos in a casserole dish.
- Bake for 12–15 MINUTES, or until the tortillas are browned and crisp.
- Serve with GREEN GODDESS DRESSING, VEGAN YOGURT, and PICO DE GALLO, if desired.
Serving Tip
Serve the taquitos straight from the oven while the tortillas are warm and crisp. Carleigh suggests Green Goddess Dressing, unsweetened vegan yogurt, and pico de gallo as optional accompaniments.
