Trending Stir-Fried Beef with Mushroom

A quick and savory stir-fry that’s trending everywhere! Featuring tender, marinated beef and fresh vegetables, this dish comes together in minutes for a restaurant-quality meal at home.
Ingredients:
- beef (thinly sliced)
- 3 tsp light soy sauce
- 1/3 tsp ground black pepper
- 1/2 tsp cornstarch
- 1/3 tsp baking soda
- 2 tsp vegetable oil (divided)
- 1/3 tsp salt
- 80 g asparagus
- 80 g mushrooms

Directions
- Thinly slice the beef against the grain.
- In a bowl, combine the sliced beef with soy sauce, black pepper, cornstarch, baking soda, and 1 tsp vegetable oil. Massage the ingredients into the beef until well-coated.
- Transfer the marinated beef to a hot wok and stir-fry on high heat until the color changes and it is nearly cooked through. Remove the beef from the wok and set aside.
- Bring a pot of water to a boil and add salt and 1 tsp olive oil.
- Add the mushrooms and asparagus to the boiling water and blanch for 1 minute. Drain well.
- Add the blanched vegetables to the wok with the beef. Mix everything well on high heat until combined and heated through. Serve immediately.
