Strawberry Matcha Cookies

Soft matcha cookies topped with a luscious strawberry cream swirl, these Strawberry Matcha Cookies are as gorgeous as they are delicious!
Ingredients:
Strawberry Cream
Directions
- Melt the butter on low in the microwave and let it cool to room temperature.
- Whisk the cooled butter with sugar until smooth (by hand or with a paddle attachment).
- Add the egg and vanilla extract; mix until combined.
- In a separate bowl, whisk together flour, baking powder, baking soda, matcha powder, and salt.
- Combine wet and dry mixtures until a dough forms.
- Scoop into 11 portions, roll into balls, and lightly press to flatten. Chill for 30 minutes.
- Preheat oven to 350°F. Bake cookies on a lined sheet for 10–11 minutes, until edges are set. Cool completely.
Strawberry Cream:
- Simmer strawberries with water until soft. Stir in vanilla sugar. Thicken with a slurry of cornstarch and water. Strain and cool.
- Whip heavy cream to stiff peaks. Fold in cooled strawberry compote.
- Pipe strawberry cream onto cooled cookies in swirls. Dust with extra matcha powder. Enjoy!
