This hearty, smoky, no-seasoning-needed pot of collard greens, cabbage, sausage, and bacon is Southern soul in a bowl. With just butter, aromatics, and rich chicken broth, the magic flavors come from the meats and the veggies themselves. Simple, savory, and deeply comforting — this one’s a keeper.
Ingredients:
- 1 head cabbage, sliced
- 2 bunches collard greens, trimmed & sliced
- 16 oz thick sliced hickory smoked bacon
- 0.5 yellow onion, diced
- 0.5 green bell pepper, diced
- 0.5 red bell pepper, diced
- 4 smoked sausage links (Zummos preferred), sliced
- 32 oz chicken broth
- 2 tbsp minced garlic
- Unsalted butter
Instructions
- ◊ Prep greens: Trim, wash, and slice your collard greens. Dice your peppers and onion.
- ◊ Sauté the flavor base: In a large pot, melt 3 tbsp butter. Add peppers, onions, sliced bacon, sausage, and garlic. Cook covered over medium heat for 4–5 minutes, stirring occasionally.
- ◊ Cook greens: Add your collard greens, stir, and cook down uncovered for 2–3 minutes.
- ◊ Simmer: Pour in the chicken broth, cover, bring to a boil, then reduce to low and simmer covered for 30 minutes.
- ◊ Finish with cabbage: Stir in the cabbage and cover for another 15 minutes, stirring occasionally until everything is tender and full of flavor.
