Shredded Chicken Pickle Salad

This Shredded Chicken Pickle Salad is creamy, tangy, and full of crunch! It’s the ultimate meal-prep protein that’s perfect for sandwiches, wraps, or scooped straight from the bowl.
Ingredients:

- Heat olive oil in a lidded frying pan over medium-high heat.
- Add the chicken breasts and sear for about 3 minutes per side, until lightly browned.
- Pour in enough water to come about 1 inch up the sides. Cover and steam for 10 minutes or until the chicken is fully cooked.
- Transfer chicken to a board and shred using two forks or a hand mixer.
- In a bowl, mix together the shredded chicken, Greek yogurt, mayonnaise, red onion, pickles, cucumber, Dijon mustard, and chives.
- Season well with salt and pepper to taste.
- Stuff into your favorite bread, wrap, or carb and enjoy!
