This Shredded Chicken Pickle Salad is creamy, tangy, and full of crunch! It’s the ultimate meal-prep protein that’s perfect for sandwiches, wraps, or scooped straight from the bowl.

Directions

  1. Heat olive oil in a lidded frying pan over medium-high heat.
  2. Add the chicken breasts and sear for about 3 minutes per side, until lightly browned.
  3. Pour in enough water to come about 1 inch up the sides. Cover and steam for 10 minutes or until the chicken is fully cooked.
  4. Transfer chicken to a board and shred using two forks or a hand mixer.
  5. In a bowl, mix together the shredded chicken, Greek yogurt, mayonnaise, red onion, pickles, cucumber, Dijon mustard, and chives.
  6. Season well with salt and pepper to taste.
  7. Stuff into your favorite bread, wrap, or carb and enjoy!
