A mesmerizing purple and gold layered electrolyte drink that’s almost too pretty to drink! Toasted coconut and lime blend into a creamy golden base that floats over a deep, antioxidant-rich grape puree. It’s naturally colorful, completely dye-free, and incredibly hydrating.
Ingredients:
Grape Puree
- 1 1/4 cups purple grapes (or red grapes)
- 2 tbsp grape juice (no sugar added)
- 1 tsp maple syrup (or honey)
Toasted Coconut Lime Base
- 2 1/2 cups coconut water
- 2 tbsp toasted coconut chips
- 1/2 - 1 whole lime (peeled, use whole for stronger flavor and half for milder)
- 1/2 - 1 tsp salt (to taste)
- 1-2 tbsp honey (or maple syrup)
- ice (for serving)
- lime wedge (for garnish)
- grapes (fresh, for garnish)
Ingredients are subject to availability at local stores. Unavailable items will be automatically substituted at best-effort.
Directions
- Make the Grape Puree: In a wide-mouth jar, combine 1¼ cups purple or red grapes, 2 tablespoons no-sugar-added grape juice, and 1 teaspoon maple syrup or honey. Blend using an immersion blender until smooth. Set aside.
- Make the Toasted Coconut Lime Base: In a separate blender, combine 2½ cups coconut water, 2 tablespoons toasted coconut chips, ½–1 whole lime (peeled—use whole for stronger lime flavor), ½–1 teaspoon salt, and 1–2 tablespoons honey or maple syrup. Blend on high until completely smooth and creamy.
- Assemble: Fill two glasses with ice. Add about ½ cup of the grape puree to the bottom of each glass.
- Slowly strain the toasted coconut lime mixture over the grape puree to create a stunning layered effect—the golden coconut layer will float on top of the deep purple grape layer.
- Stir gently before sipping or serve as-is to show off the beautiful layers. Garnish with a lime wedge and fresh grapes. Enjoy!
