Caramelized Onion Glazed Meatloaf

Slow-cooked caramelized onions and a simple glaze turn this into a rich, balanced meatloaf that feels far from basic. It’s classic comfort food made more intentional without increasing the grocery bill.

Ingredients:
- 1 lb ground beef
- 1 onion (large onion (thinly sliced))
- 1 egg
- 1/2 cup breadcrumbs
- 1/3 cup ketchup
- 1 tbsp mustard
- salt ((to taste))
- 1 tbsp oil

Instructions
Preheat oven to 375°F. Lightly grease a loaf pan.
Heat oil in a pan over medium-low heat. Add onions and cook 15–20 minutes until deeply caramelized.
In a bowl, combine ground beef, egg, breadcrumbs, half the ketchup, mustard, and salt.
Fold in half of the caramelized onions.
Shape into a loaf and place in the pan.
Spread remaining ketchup on top.
Bake 40–50 minutes until cooked through.
Top with remaining onions before serving.
