Ginger Garlic Chicken Vegetable Soup

Ingredients:
- 1 lb chicken ((thighs or breast))
- 6 cups chicken broth
- 2 carrots ((sliced))
- 2 celery (stalks (chopped))
- 1 onion (small onion (diced))
- 3 garlic (cloves garlic (minced))
- 1 tsp ginger (ground ginger (or small fresh piece))
- salt ((to taste))
- 1 tbsp oil

Instructions
Heat oil in a large pot over medium heat.
Add onion, carrots, and celery. Cook 5–6 minutes until softened.
Stir in garlic and ginger and cook for 1 minute.

Remove chicken, shred it, and return to the pot.
Season with salt and simmer another 5 minutes.
Serve warm.
