Mini Garden Pizzas

Ingredients

4 pieces of naan

1 tub of hummus (maybe an extra tub if you want more hummus on your pizza)

2 cubs of diced or shredded rotisserie chicken

1 cup diced cucumbers

1 cup diced tomatoes

2 cups shredded mozzarella

(optional) chopped fresh parsley, olives, or a squeeze of lemon

Directions

  1. Set your oven to broil on high. Line a baking sheet with foil for easy cleanup.

  2. Lay the naan on the sheet. Spread hummus over each piece of naan, leaving a ½‑inch border.

  3. Spoon a layer of cucumber and tomato over the hummus. (Drain off excess liquid first so the naan stays crisp.)
  4. Scatter the diced rotisserie chicken evenly.

  5. Sprinkle each naan with ¼ cup shredded mozzarella.
  6. Slide the pan under the broiler for 3-5 minutes, or until the edges of the pitas start to toast, the toppings are warmed, and the cheese is melted.

  7. Cut each pizza into wedges. Add optional parsley, olives, or a squeeze of lemon, and enjoy immediately.

Family tip: Let kids build their own to make an ordinary evening of prepping a fun family activity.
