  1. Season the short ribs generously with salt and pepper.
  2. In a large Dutch oven, heat olive oil over medium-high. Sear ribs on all sides until browned, then remove and set aside.
  3. Add onion and cook for 3–4 minutes. Stir in the garlic and tomato paste. Cook for 1 minute more.
  4. Pour in the red wine to deglaze, scraping up any browned bits. Let simmer for 3–5 minutes.
  5. Add the beef broth, cream, red pepper flakes, and Italian seasoning. Return ribs to the pot.
  6. Cover and braise at 325°F (160°C) for 2.5 to 3 hours, until meat is fall-apart tender.
  7. Serve with mashed potatoes, spoon sauce over the top, and garnish with fresh thyme.
