Make the sauce first
1. Mix everything together
2. Taste and adjust (more relish = sweeter, more vinegar = tangier)
3. Let it sit in the fridge 30 minutes so it hits right
Make the burger
1. Prep the onion
• Slice into thick rings (½–1 inch)
• Use the largest outer rings as your “buns”
2. Cook the onions
• Add oil or butter to a pan
• Cook on medium heat until soft, caramelized, slightly charred (8–10 mins)
3. Cook the patties
• Smash patties in a hot pan
• Season with salt & pepper
• Flip, add cheese, let melt
4. Build it
• Onion “bun”
• Patty + melted cheese
• Light swipe of sauce
• (Optional: extra caramelized onions)
• Top onion “bun”
Quick tips
• Don’t overload the sauce! It can slide with the onion.
• Double up onion layers if you want it sturdier.
• Press it slightly at the end so it holds.
