
Low-sugar Classic Crumbl Cookie
Ingredients:
Cookies
- 1 1/2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup Truvia sweetener
- 1/4 tsp baking soda
- 1 pinch salt
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp almond extract (optional for the signature flavor)
Frosting
- 1/4 cyo cream cheese (softened)
- 2 tbsp unsalted butter (softened)
- 2 tbsp powdered monk fruit
- 1/2 tsp vanilla extract
- 1 drop beet juice or pink food coloring (for the classic pink hue)

Preheat oven to 350°F and line a baking sheet with parchment paper.

In a bowl, whisk together almond flour, coconut flour, baking soda, and salt.

In a separate bowl, cream together the butter and sweetener until fluffy. Add the egg and vanilla.

Mix dry ingredients into the wet until a soft dough forms.

Scoop into balls, flatten slightly, and bake for 10–12 minutes until edges are lightly golden.

Let cool completely before frosting.

For frosting, beat all ingredients until smooth. Add natural food coloring last.

Spread generously on cooled cookies. Chill to set, or enjoy immediately.
