Low Carb Philly Cheese Steak

Here’s what I made for lunch to help reverse my pre diabetes. Low Carb Philly’s are easy to make and delicious- minus all the carbs. I served mine with baked sweet potato fries and a side of ketchup. I like to use avocado oil spray. If the veggies start to look dry, add more spray. All the bold, melty, savory flavors of the classic sandwich, without the bread. It’s a quick, protein-packed meal perfect for keto, prediabetic, or low-sugar lifestyles.

Ingredients:

Directions

  1. Prep the Lettuce
    Carefully separate and rinse the lettuce leaves. Pat them dry and set aside in the fridge to stay crisp.
  2. Sauté the Veggies
    In a large skillet over medium heat, add a drizzle of olive oil (optional) and cook the onions, green bell peppers, and mushrooms until soft and slightly caramelized, about 6–8 minutes. Remove from skillet and set aside.
  3. Cook the Beef
    In the same skillet, add shaved beef and season with onion powder, garlic powder, smoked paprika, salt, and pepper. Sear until just browned and cooked through, about 3–5 minutes.
  4. Combine Everything
    Return the sautéed vegetables to the skillet with the beef. Stir well and cook together for another 2–3 minutes to blend flavors.
  5. Melt the Cheese
    Sprinkle cheese over the mixture in the pan. Cover for 1–2 minutes until the cheese melts into the beef and veggie mixture.
  6. Assemble the Cups
    Spoon the cheesy beef mixture into each lettuce leaf. Serve warm and enjoy immediately.
