Ingredients:
- 4 boneless skinless chicken breasts (or thighs)
- Juice of 2 large lemons
- 0.25 cup olive oil
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp honey
- Salt & pepper to taste
- Optional garnish: fresh parsley, grilled lemon slices
Instructions
- ◊ Marinate: In a bowl or zip-top bag, combine lemon juice, olive oil, garlic, zest, oregano, honey, salt and pepper. Add chicken and marinate for 30 minutes to 2 hours.
- ◊ Preheat the grill: Heat to medium-high and oil the grates lightly to prevent sticking.
- ◊ Grill the chicken: Remove chicken from marinade and grill 5–6 minutes per side or until internal temp reaches 165°F and nice char marks appear.
- ◊ Rest & serve: Let rest 5 minutes before slicing. Serve with fresh herbs, grilled veggies, or over rice and enjoy that lemony perfection.
