Lemon Garlic Roast Chicken

Crispy skin, juicy meat, and bright, zesty flavor, this lemon garlic roast chicken is what Sunday dinners dream of being. Perfectly seasoned and oven-roasted, it’s an easy centerpiece that never fails to impress.

Ingredients:

Directions

  1. Preheat oven to 425°F (220°C).
  2. Line a baking dish or skillet with lemon slices.
  3. Pat the chicken dry, stuff the cavity with a halved lemon and garlic head.
  4. Loosen the skin and rub some garlic butter under it; spread the rest over the outside.
  5. Drizzle with olive oil and place breast-side up over the lemons.
  6. Roast 1–1½ hours, basting every 30 minutes, until internal temp reaches 165°F.
  7. Let rest 15 minutes before carving.

*Let the chicken sit out at room temperature for about 30 minutes for a more even cooking.
