
Korean BBQ Galbi (갈비)
Few dishes capture the soul of Korean BBQ quite like Galbi. These short ribs are marinated in a luxurious blend of sweet, salty, garlicky goodness—then grilled to caramelized, charred perfection. Perfect for summer gatherings or whenever you’re craving bold flavor, this dish will have your guests asking for seconds (and thirds).
- Ingredients• 2.5 lbs beef short ribs, flanken-style
• 1/2 cup soy sauce
• 1/4 cup brown sugar
• 1/4 cup mirin or rice wine
• 2 tbsp sesame oil
• 1 Korean pear or Bosc pear, grated
• 1/2 onion, grated
• 4 garlic cloves, minced
• 1-inch piece of ginger, grated
• 1 tbsp sesame seeds
• 3 scallions, thinly sliced
• Fresh cracked black pepper
Instructions
- ◊ Prep the marinade: In a large bowl, combine soy sauce, sugar, mirin, sesame oil, grated pear, onion, garlic, and ginger. Add sesame seeds and scallions.
- ◊ Marinate: Add the ribs to the marinade. Massage it in well. Cover and refrigerate for at least 4 hours or overnight for max flavor.
- ◊ Grill: Preheat your grill to medium-high. Grill ribs 3–4 minutes per side until they’re deeply charred and caramelized.
- ◊ Serve: Garnish with extra scallions and sesame seeds. Enjoy with steamed rice and kimchi!
