Quesadillas are one of the easiest “bridge foods” for picky eaters because they contain familiar ingredients while allowing for endless customization.
Tonight’s dinner focuses on introducing vegetables and new flavors in a low-pressure environment. Every ingredient stays visible and separate, giving children complete control over what goes into their quesadilla.
Research shows that children are more willing to try new foods when they can see each ingredient individually and decide for themselves what to include.
The goal tonight isn’t to create the healthiest quesadilla.
The goal is to help children become more comfortable interacting with new foods.

Ingredients:
Quesadilla Base
- 8 medium flour tortillas
Protein
- 2 cups cooked shredded chicken
Safe Fillings
- 2 cups shredded Mexican cheese blend
Stretch Foods
- 1 bell pepper (finely diced)
- 1/2 cup corn kernels
- 1/2 cup baby spinach (finely chopped)
Optional Explorer Fillings
- 1/2 cup black beans (drained and rinsed)
- 1/4 cup red onion (finely diced)
- 1/2 cup salsa
Dipping Sauces
- 1/2 cup sour cream
- 1/2 cup mild salsa

Step 1: Create the Filling Bar
Place every ingredient into its own small bowl. Keep all fillings separate. Arrange everything buffet-style on the counter or table. Children should be able to easily see every ingredient available.
Remember: Children do not need to use every ingredient. The goal is exploration and participation.
Step 2: Build the Quesadillas
Lay four tortillas on a clean surface. Sprinkle cheese over half of each tortilla. Add chicken and any desired fillings. Fold each tortilla in half. Repeat with remaining tortillas.
Step 3: Cook the Quesadillas
Heat a large skillet over medium heat. Place quesadillas into the skillet. Cook for 2–3 minutes per side until golden brown and crispy. The cheese should be fully melted. Transfer to a cutting board. Repeat with remaining quesadillas.
Step 4: Slice & Serve
Allow quesadillas to cool for 2 minutes. Cut each quesadilla into triangles. Serve with sour cream and salsa for dipping. Leave extra toppings on the table for continued exploration.
