High-Protein Poppyseed Chicken

A creamy, comforting chicken casserole with a buttery, crunchy Ritz cracker topping and a sprinkle of poppy seeds. This high-protein twist on a classic uses Greek yogurt to add creaminess and extra protein, making it a satisfying family dinner that’s ready in no time.
Ingredients:
- oil spray
- 4 boneless skinless chicken breast
- salt (to taste)
- black pepper (to taste)
- 2 cans cream of mushroom soup
- 1 cup plain nonfat Greek yogurt
- 1 1/2 tubes Ritz crackers (or whatever cracker you like)
- 2-3 tbsp butter
- poppyseed (for garnish)

Directions
- Spray a skillet or pan with oil spray and heat over medium heat. Add 4 pieces of chicken (breasts or thighs), season with salt and pepper, and cook until golden brown and cooked through.
- Once cooked, remove the chicken from the pan and cube it into bite-sized pieces. Transfer the cubed chicken to a baking dish.
- In a bowl, combine 2 cans of cream of mushroom soup and 1 cup of plain nonfat Greek yogurt. Mix until smooth. Pour the mixture over the chicken in the baking dish and spread into an even layer.
- Place 1½ tubes of Ritz crackers into a large resealable plastic bag. Crush the crackers until they form coarse crumbs.
- Add 2-3 tablespoons of butter to the bag with the cracker crumbs. Seal the bag and mix until the butter is evenly distributed throughout the crumbs.
- Sprinkle the buttery cracker crumb mixture evenly over the top of the casserole. Then sprinkle poppy seeds over the top.
- Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until the casserole is bubbly and the topping is golden brown.
- Remove from the oven, let cool slightly, and serve warm. Enjoy!
