A creamy, comforting chicken casserole with a buttery, crunchy Ritz cracker topping and a sprinkle of poppy seeds. This high-protein twist on a classic uses Greek yogurt to add creaminess and extra protein, making it a satisfying family dinner that’s ready in no time.

Directions

  1. Spray a skillet or pan with oil spray and heat over medium heat. Add 4 pieces of chicken (breasts or thighs), season with salt and pepper, and cook until golden brown and cooked through.
  2. Once cooked, remove the chicken from the pan and cube it into bite-sized pieces. Transfer the cubed chicken to a baking dish.
  3. In a bowl, combine 2 cans of cream of mushroom soup and 1 cup of plain nonfat Greek yogurt. Mix until smooth. Pour the mixture over the chicken in the baking dish and spread into an even layer.
  4. Place 1½ tubes of Ritz crackers into a large resealable plastic bag. Crush the crackers until they form coarse crumbs.
  5. Add 2-3 tablespoons of butter to the bag with the cracker crumbs. Seal the bag and mix until the butter is evenly distributed throughout the crumbs.
  6. Sprinkle the buttery cracker crumb mixture evenly over the top of the casserole. Then sprinkle poppy seeds over the top.
  7. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until the casserole is bubbly and the topping is golden brown.
  8. Remove from the oven, let cool slightly, and serve warm. Enjoy!
