High Protein Frittatas and Blueberry Banana Bread
Ingredients:
- 6 eggs
- 1 cup cottage cheese
- 1 cup egg whites
- 1 red bell pepper
- 1/2 cup cheese
- 1/4 cup green onion
- 1 cup mushrooms
- 1 cup spinach
- 2 ripe bananas
- 2 eggs

- 1 tsp baking soda
- 1 pinch salt
- 1/2 cup egg whites
- 1/2 cup cottage cheese
- 3/4 cup honey (or maple syrup)
- 1/2 cup frozen blueberries (or chocolate chips)

Protein Frittata
- 6 large eggs
- 1/2 cup cottage cheese
- 1/4 cup egg whites
- 1/2 cup chopped vegetables (e.g., spinach, tomatoes, onions)
- 1/4 cup shredded cheese (optional)
- Salt and pepper to taste
Blueberry Banana Bread
- 2–3 ripe bananas, mashed
- 2 large eggs
- 1/4 cup maple syrup or honey
- 1/2 cup unsweetened applesauce
- 1 tsp vanilla extract
- 1 cup whole wheat flour or oat flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup fresh or frozen blueberries
Directions
Frittat:

- Preheat your oven to 350°F.
- In a mixing bowl, whisk together the eggs, cottage cheese, and egg whites until no clumps remain.
- Gently stir in your vegetables and optional cheese.
- Pour into a greased or parchment-lined baking dish.
- Bake for 30 minutes or until the center is set. Let cool before slicing.
While the frittata bakes, prepare the banana bread:

- In a separate bowl, mash the bananas and mix in the eggs, maple syrup, applesauce, and vanilla.
- Stir in the dry ingredients: flour, baking soda, cinnamon, and salt until combined.
- Gently fold in the blueberries.
- Pour the batter into a loaf pan lined with parchment or sprayed with non-stick spray.
- Bake at 350°F for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool before slicing and enjoying!
