This protein-packed frittata and wholesome banana bread combo makes for the perfect meal prep! Get your protein in with the savory egg bake and enjoy a slice of nutrient-rich sweetness as a snack or breakfast treat.

Protein Frittata

  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/4 cup egg whites
  • 1/2 cup chopped vegetables (e.g., spinach, tomatoes, onions)
  • 1/4 cup shredded cheese (optional)
  • Salt and pepper to taste

Blueberry Banana Bread

  • 2–3 ripe bananas, mashed
  • 2 large eggs
  • 1/4 cup maple syrup or honey
  • 1/2 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1 cup whole wheat flour or oat flour
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup fresh or frozen blueberries

Frittat:
    1. Preheat your oven to 350°F.
    2. In a mixing bowl, whisk together the eggs, cottage cheese, and egg whites until no clumps remain.
    3. Gently stir in your vegetables and optional cheese.
    4. Pour into a greased or parchment-lined baking dish.
    5. Bake for 30 minutes or until the center is set. Let cool before slicing.
While the frittata bakes, prepare the banana bread:
    1. In a separate bowl, mash the bananas and mix in the eggs, maple syrup, applesauce, and vanilla.
    2. Stir in the dry ingredients: flour, baking soda, cinnamon, and salt until combined.
    3. Gently fold in the blueberries.
    4. Pour the batter into a loaf pan lined with parchment or sprayed with non-stick spray.
    5. Bake at 350°F for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
    6. Let the bread cool before slicing and enjoying!
