Garlic-Herb Butter Scallops with Lemon Asparagus
Juicy pan-seared scallops drenched in garlic-herb butter and served with bright, zesty asparagus. This one-pan dinner feels gourmet but comes together fast enough for a weeknight!
Ingredients
- 1 lb sea scallops, patted dry
- 1 bunch asparagus, trimmed
- 3 tbsp unsalted butter
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp lemon zest
- Juice of half a lemon
- 1 tbsp fresh parsley, chopped
- Salt and black pepper, to taste

Instructions
- Heat olive oil in a large skillet over medium-high heat. Season scallops with salt and pepper.
- Sear scallops for about 2 minutes per side until golden-brown and opaque. Remove and set aside.
- Add butter and garlic to the same skillet. Stir frequently for about 30 seconds until fragrant.
- Add asparagus and sauté for 3–4 minutes until just tender. Season with salt, pepper, and lemon zest.
- Return scallops to the skillet and drizzle with lemon juice. Toss gently to coat in the garlic butter.
- Garnish with fresh parsley and serve warm.
