Garlic-Herb Butter Scallops with Lemon Asparagus

Juicy pan-seared scallops drenched in garlic-herb butter and served with bright, zesty asparagus. This one-pan dinner feels gourmet but comes together fast enough for a weeknight!

Ingredients

  • 1 lb sea scallops, patted dry
  • 1 bunch asparagus, trimmed
  • 3 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp lemon zest
  • Juice of half a lemon
  • 1 tbsp fresh parsley, chopped
  • Salt and black pepper, to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season scallops with salt and pepper.
  2. Sear scallops for about 2 minutes per side until golden-brown and opaque. Remove and set aside.
  3. Add butter and garlic to the same skillet. Stir frequently for about 30 seconds until fragrant.
  4. Add asparagus and sauté for 3–4 minutes until just tender. Season with salt, pepper, and lemon zest.
  5. Return scallops to the skillet and drizzle with lemon juice. Toss gently to coat in the garlic butter.
  6. Garnish with fresh parsley and serve warm.
